- Maida 200 gms
- Rice flour 50 gms
- Akshayakalpa set curd- 100gms
- Sugar 200 gms
- Turmeric or orange food colour-1tsp
- Cardamom or saffron
- Half small lemon
- 1/2 tsp baking soda 200 ml water
- 400 gms Oil/Akshayakalpa Organic ghee to fry
In a bowl mix maida, rice flour and 1/2 tsp turmeric
Add baking soda, curd and water and again mix well to a dosa batter consistency, set aside for 5 minutes.
In a bowl add sugar and 200 ml water and boil till the syrup thickens and add the turmeric and lemon juice, cardamom/saffron and set aside
In a Kadai, heat Ghee. Make a cone in the milk pouch and pour the batter and seal the edge
On a medium flame, slowly create concentric circles of the batter in a cone or to jalebi shapes, the jalebis puffs up, flip the other side until golden brown
Remove from ghee and immediately dip into sugar syrup leave it for 1 minute and remove from the syrup into a serving dish.
Jalebis can be had hot or you may store in the fridge.
